Peanut Butter Oatmeal Bars:
- 1 cup creamy peanut butter
- 1/2 cup honey or maple syrup
- 2 cups old-fashioned rolled oats
- 1/4 cup ground flaxseed (optional)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips (optional)
- Nonstick cooking spray or parchment paper for lining
Instructions
- Prepare the Peanut Butter Mixture: In a medium saucepan over low heat, stir together the peanut butter and honey until smooth and warm. Remove from heat and stir in the vanilla extract and salt.
- Combine Ingredients: Add the oats and ground flaxseed, mixing until fully combined. Let the mixture cool slightly, then fold in the chocolate chips if using.
- Press into Pan: Line an 8×8-inch baking pan with parchment paper or lightly spray with nonstick cooking spray. Press the mixture firmly into the pan in an even layer.
- Chill and Cut: Chill in the refrigerator for at least 1 hour to set. Once firm, cut into bars and store in an airtight container in the fridge for up to one week.
Notes
