Peanut Butter Oatmeal Bars:

  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 2 cups old-fashioned rolled oats
  • 1/4 cup ground flaxseed (optional)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips (optional)
  • Nonstick cooking spray or parchment paper for lining

Instructions

  1. Prepare the Peanut Butter Mixture: In a medium saucepan over low heat, stir together the peanut butter and honey until smooth and warm. Remove from heat and stir in the vanilla extract and salt.
  2. Combine Ingredients: Add the oats and ground flaxseed, mixing until fully combined. Let the mixture cool slightly, then fold in the chocolate chips if using.
  3. Press into Pan: Line an 8×8-inch baking pan with parchment paper or lightly spray with nonstick cooking spray. Press the mixture firmly into the pan in an even layer.
