Pears:

  • 4 ripe but firm pears (such as Bosc or Anjou), peeled, cored, and quartered

Puff Pastry:

  • 1 sheet puff pastry, thawed

Caramel:

  • 1/2 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (204°C).
  2. Melt the butter and sugar: In a 10-inch oven-safe skillet, melt the butter over medium heat. Add the sugar and stir constantly until it dissolves and turns golden brown, about 5–7 minutes. Remove from heat and stir in vanilla extract, cinnamon if using, and a pinch of salt.
  3. Arrange the pears: Arrange the pear quarters cut-side up in the caramel in a circular pattern. Cook the pears in the caramel for about 10 minutes on medium heat.
  4. Prepare the pastry: Roll out the puff pastry and lay it over the pears, tucking in the edges. Cut small slits in the pastry.
  5. Bake the tart: Transfer the skillet to the oven and bake for 25–30 minutes until golden and puffed. Let it rest before inverting onto a plate.
