A hearty and flavorful pearl couscous vegetable soup that is easy to make and perfect for a cozy meal. Packed with healthy veggies and pearl couscous in a savory broth, this vegetarian soup is a satisfying one-pot dish.

For the Soup:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can (14.5 ounces) diced tomatoes, with juice
- 6 cups vegetable broth
- 3/4 cup pearl couscous
- 1 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup baby spinach (optional)
- juice of 1/2 lemon (optional)
- chopped fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion, garlic, carrots, and celery. Cook for 5–6 minutes until vegetables start to soften.
- Stir in zucchini and green beans, and cook for another 3–4 minutes.
- Add diced tomatoes, vegetable broth, pearl couscous, thyme, basil, salt, and pepper. Bring to a boil, then simmer for 15–20 minutes until couscous is tender.
- If using, add spinach and cook for 2 more minutes until wilted.
- Finish with lemon juice and garnish with parsley.
Notes
- For added protein, stir in a can of drained chickpeas or white beans.
- Feel free to swap out veggies based on what’s in season.
- Whole wheat pearl couscous can be used for extra fiber.
