Description

A hearty and flavorful pearl couscous vegetable soup that is easy to make and perfect for a cozy meal. Packed with healthy veggies and pearl couscous in a savory broth, this vegetarian soup is a satisfying one-pot dish.

For the Soup:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 6 cups vegetable broth
  • 3/4 cup pearl couscous
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup baby spinach (optional)
  • juice of 1/2 lemon (optional)
  • chopped fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, garlic, carrots, and celery. Cook for 5–6 minutes until vegetables start to soften.
  2. Stir in zucchini and green beans, and cook for another 3–4 minutes.
  3. Add diced tomatoes, vegetable broth, pearl couscous, thyme, basil, salt, and pepper. Bring to a boil, then simmer for 15–20 minutes until couscous is tender.
  4. If using, add spinach and cook for 2 more minutes until wilted.
  5. Finish with lemon juice and garnish with parsley.

Notes

  • For added protein, stir in a can of drained chickpeas or white beans.
  • Feel free to swap out veggies based on what’s in season.
  • Whole wheat pearl couscous can be used for extra fiber.
