For the Filling:
- 6 cups thinly sliced peeled apples (Granny Smith and Honeycrisp)

- 1 tablespoon unsalted butter (cut into small pieces)
- 1 egg (beaten, for egg wash)
- 1 tablespoon coarse sugar (optional, for sprinkling)
Instructions

- Make the Filling: Toss the sliced apples with sugars, spices, flour, and lemon juice until coated.
- Assemble the Pie: Roll out the dough, place one disk in a pie dish, add the filling, top with the second crust, and crimp the edges. Vent the top crust, brush with egg wash, and sprinkle with sugar.
