Instructions

  1. Marinate the chicken: In a large bowl, whisk together olive oil, lime juice, garlic, cumin, paprika, oregano, salt, and pepper. Add chicken and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
  2. Prepare the green sauce: Combine cilantro, mayonnaise, sour cream, lime juice, olive oil, jalapeño, and garlic in a blender or food processor. Blend until smooth. Add salt to taste. Refrigerate until ready to use.
  3. Cook the chicken: Preheat grill or oven to 400°F (200°C). Grill chicken over medium-high heat for 5–6 minutes per side, or bake on a lined sheet for 25–30 minutes at 400°F (200°C) until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
