Description

This Pesto Chicken Flatbread recipe combines tender chicken, flavorful pesto, and a blend of cheeses on crispy flatbreads for a quick, delicious meal that’s perfect for weeknight dinners or casual gatherings.

Ingredients

Scale

Chicken and Seasoning

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Flatbread and Toppings

  • 4 large flour tortillas (or flatbreads of your choice)
  • 1 cup pesto (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons grated Parmesan cheese
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the flatbreads.
  2. Season chicken: In a medium bowl, toss the bite-sized chicken pieces with olive oil, salt, black pepper, garlic powder, and red pepper flakes if you want a little heat.
  3. Cook chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for about 6-8 minutes, stirring occasionally, until the chicken reaches an internal temperature of 165°F (74°C) and is fully cooked. Remove the chicken from the skillet and set aside.
  4. Prepare flatbreads: Lay the flour tortillas flat on a baking sheet, ready for toppings.
  5. Spread pesto: Evenly spread about 1/4 cup of pesto over each tortilla to create a flavorful base.
  6. Add chicken: Distribute the cooked chicken pieces evenly over the pesto-covered flatbreads.
  7. Top with cheese and tomatoes: Sprinkle shredded mozzarella cheese, chopped sun-dried tomatoes, crumbled feta cheese if using, and grated Parmesan cheese over the chicken layer.
  8. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese has melted, is bubbly, and has turned slightly golden brown.
  9. Serve: Remove the flatbreads from the oven and let them cool for a few minutes. Garnish with fresh basil leaves if desired before slicing and serving.

Notes

  • Using store-bought pesto saves time, but homemade pesto will give a fresher flavor.
  • Feel free to substitute the flour tortillas with any flatbread such as naan or pita for a different texture.
  • Red pepper flakes can be omitted or adjusted to taste depending on your spice preference.
  • Ensure chicken is cooked through completely for safety; use a meat thermometer to check.
  • For a vegetarian version, omit chicken and add extra vegetables like roasted bell peppers or mushrooms.
