Instructions
- Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the flatbreads.
- Season chicken: In a medium bowl, toss the bite-sized chicken pieces with olive oil, salt, black pepper, garlic powder, and red pepper flakes if you want a little heat.
- Cook chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for about 6-8 minutes, stirring occasionally, until the chicken reaches an internal temperature of 165°F (74°C) and is fully cooked. Remove the chicken from the skillet and set aside.
- Prepare flatbreads: Lay the flour tortillas flat on a baking sheet, ready for toppings.
- Spread pesto: Evenly spread about 1/4 cup of pesto over each tortilla to create a flavorful base.
- Add chicken: Distribute the cooked chicken pieces evenly over the pesto-covered flatbreads.
- Top with cheese and tomatoes: Sprinkle shredded mozzarella cheese, chopped sun-dried tomatoes, crumbled feta cheese if using, and grated Parmesan cheese over the chicken layer.
- Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese has melted, is bubbly, and has turned slightly golden brown.
- Serve: Remove the flatbreads from the oven and let them cool for a few minutes. Garnish with fresh basil leaves if desired before slicing and serving.

- Using store-bought pesto saves time, but homemade pesto will give a fresher flavor.
