Wet Ingredients:

  • 1 3/4 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1 cup crushed pineapple, drained
  • 1 cup coconut milk
  • 1 cup sweetened shredded coconut

For the frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 12 tablespoons coconut milk
  • 1 cup sweetened shredded coconut, toasted, for garnish

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. Mix Dry Ingredients: Combine flour, baking powder, baking soda, and salt in a bowl.
  3. Cream Butter and Sugar: In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla and coconut extracts.
  4. Combine Wet and Dry: Stir in crushed pineapple. Alternate adding dry ingredients and coconut milk to the wet mixture. Fold in shredded coconut.
  5. Bake: Divide batter into pans and bake for 28-32 minutes. Cool cakes on wire racks.
  6. Prepare Frosting: Beat cream cheese and butter, add powdered sugar, extracts, and coconut milk until smooth.
  7. Assemble: Frost between layers and on top and sides of cake. Garnish with toasted coconut.
