Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
Cheesecake Filling:
- 16 oz cream cheese (softened)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple (drained)
- 1/2 cup sweetened shredded coconut
- 1/4 cup sour cream
- 2 tablespoons all-purpose flour
- Additional shredded coconut for topping (optional)
Instructions
- Preheat the Oven: Preheat oven to 325°F (165°C) and line an 8×8-inch baking pan with parchment paper.
- Prepare Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes.
- Make Filling: Beat cream cheese and sugar, then add eggs one at a time. Mix in vanilla, sour cream, flour, pineapple, and coconut.
- Fill and Bake: Pour filling over crust, sprinkle with coconut, and bake for 35-40 minutes.
- Cool and Chill: Cool at room temperature, then refrigerate for at least 3 hours before slicing into bars.

- Make sure the pineapple is well-drained to avoid excess moisture.
- Toast coconut for topping for extra flavor and texture.
