Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream Butter & Sugar: In a large bowl, beat butter and sugar until light and fluffy.
  4. Add Wet Ingredients: Beat in eggs one at a time, then add vanilla extract. Stir in crushed pineapple.
  5. Combine Batter: Add flour mixture in parts, alternating with pineapple juice and sour cream. Mix until just combined.
  6. Bake: Divide batter into liners and bake for 18-20 minutes until a toothpick comes out clean.
  7. Make Frosting: Beat butter, powdered sugar, pineapple juice, crushed pineapple, and vanilla until fluffy.
  8. Frost Cupcakes: Frost cooled cupcakes and garnish as desired.
