Cheesecake Crust:

- 1/2 cup pistachio paste
- 1/2 cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/2 cup finely chopped pistachios, plus extra for garnish

Instructions
- Preheat the oven: Preheat oven to 325°F (160°C).
- Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake for 10 minutes.
- Make the filling: Beat cream cheese until smooth. Add sugar, pistachio paste, sour cream, extracts, eggs, and pistachios. Mix well.
- Bake the cheesecake: Pour the batter over the crust. Bake for 55–65 minutes until set but slightly wobbly. Cool in the oven, then chill for at least 4 hours.
- Serve: Top with whipped cream and chopped pistachios before serving.
Notes
- For a stronger pistachio flavor, increase the pistachio paste or use pistachio extract.
- To prevent cracks, do not overmix the batter and avoid opening the oven door during baking.
