- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 poblano peppers, seeded and diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 4 cups chicken broth
- 2 cans (15 ounces each) white beans, drained and rinsed
- 2 cups cooked shredded chicken breast
- 1 cup frozen or canned corn
- 1/2 cup sour cream
- 1/2 cup half-and-half or heavy cream
- juice of 1 lime
- salt and freshly ground black pepper to taste
- fresh cilantro, sliced jalapeños, shredded cheese, and tortilla chips for garnish
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.
- Stir in the diced poblano peppers and cook for another 4-5 minutes until tender.
- Add the minced garlic, cumin, oregano, and chili powder and cook for 1 minute until fragrant.
- Pour in the chicken broth and stir in the white beans, shredded chicken, and corn.
- Bring to a gentle boil, then reduce the heat and simmer for 15-20 minutes to let the flavors meld.
- Remove the pot from heat and stir in the sour cream, half-and-half, and lime juice.
- Season with salt and pepper to taste.
- Ladle into bowls and top with fresh cilantro, sliced jalapeños, shredded cheese, and tortilla chips if desired.
- Serve warm.
Notes
- For extra flavor, roast the poblano peppers under the broiler until charred, then peel and dice before adding.
- Adjust the creaminess by adding more or less half-and-half.
