Ingredients:
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 can (28 oz) whole San Marzano tomatoes
- 1 teaspoon sugar (optional, to balance acidity)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon dried oregano
- 1/4 cup fresh basil leaves, chopped
Instructions
- In a large skillet or saucepan, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant, being careful not to brown it.
- Add San Marzano tomatoes with their juices, breaking them up with a spoon. Stir in sugar (if using), salt, pepper, red pepper flakes, and oregano.
- Reduce heat to low and simmer uncovered for 20–25 minutes, stirring occasionally, until sauce thickens slightly. Remove from heat and stir in fresh basil. Taste and adjust seasoning as needed.
Notes
- For a smoother sauce, blend with an immersion blender after cooking.
- This sauce pairs perfectly with spaghetti, gnocchi, or as a base for pizza.
