Description

This Potato & Swiss Chard Frittata is a delicious and nutritious breakfast or brunch option that combines tender Yukon Gold potatoes, flavorful Swiss chard, and creamy Gruyère cheese in a fluffy egg base. It’s easy to make and perfect for feeding a small crowd or enjoying as leftovers throughout the week.

Potato & Onion Mixture:

  • 2 tablespoons olive oil
  • 1 medium Yukon Gold potato, thinly sliced
  • 1 small yellow onion, thinly sliced

Swiss Chard & Egg Mixture:

  • 2 cups chopped Swiss chard, stems and leaves separated
  • 6 large eggs
  • 1/4 cup milk or cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup shredded Gruyère or Swiss cheese

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook Potato & Onion Mixture: Heat olive oil in an oven-safe skillet, add potatoes, cook until tender, then add onions and Swiss chard stems.
  3. Add Swiss Chard & Eggs: Stir in Swiss chard leaves, whisk together eggs, milk, salt, pepper, and red pepper flakes, pour over vegetables in skillet.
  4. Bake: Sprinkle cheese on top, cook on stovetop briefly, then transfer to oven and bake until set and golden.
  5. Serve: Let cool slightly, slice, and serve.

Notes

  • You can substitute kale or spinach for Swiss chard.
  • Add cooked bacon or sun-dried tomatoes for variation.
  • Serve warm, at room temperature, or chilled for a light meal.
