Potato & Onion Mixture:
- 2 tablespoons olive oil
- 1 medium Yukon Gold potato, thinly sliced
- 1 small yellow onion, thinly sliced
Swiss Chard & Egg Mixture:
- 2 cups chopped Swiss chard, stems and leaves separated
- 6 large eggs
- 1/4 cup milk or cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup shredded Gruyère or Swiss cheese
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook Potato & Onion Mixture: Heat olive oil in an oven-safe skillet, add potatoes, cook until tender, then add onions and Swiss chard stems.
- Add Swiss Chard & Eggs: Stir in Swiss chard leaves, whisk together eggs, milk, salt, pepper, and red pepper flakes, pour over vegetables in skillet.
- Bake: Sprinkle cheese on top, cook on stovetop briefly, then transfer to oven and bake until set and golden.
- Serve: Let cool slightly, slice, and serve.

- You can substitute kale or spinach for Swiss chard.
- Add cooked bacon or sun-dried tomatoes for variation.
- Serve warm, at room temperature, or chilled for a light meal.
