  • 3 large leeks, white and light green parts only, cleaned and sliced

Soup:

  • 4 cups Yukon Gold potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh chives for garnish (optional)

Instructions

  1. Cook Leek Mixture: In a large pot, melt the butter and cook leeks and onion until soft.
  2. Add Ingredients: Add potatoes, broth, thyme, and bay leaf. Simmer until potatoes are tender.
