- 3 pounds chuck roast or beef brisket
- 1 tablespoon olive oil
Seasonings:
- 1 large onion (sliced)
- 4 garlic cloves (minced)
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
Additional:
- 1 cup beef broth
- 1/2 cup barbecue sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon brown sugar
- 6 sandwich buns or brioche rolls
- Coleslaw (optional, for topping)
- Extra barbecue sauce for serving
Instructions
- Season and Sear: Pat the beef dry and season. Sear in a Dutch oven until browned.
- Prepare Sauce: Sauté onion and garlic. Add broth, barbecue sauce, Worcestershire sauce, and brown sugar.
- Cook: Return beef to pot, cover, and cook on low heat for 8 hours (or 4–5 hours in a slow cooker).
- Shred and Serve: Remove beef, shred, and return to sauce. Serve warm on buns with extra barbecue sauce and coleslaw.
