Wet Ingredients:

  • 2 large eggs
  • 1 can (15 ounces) pure pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Mix Dry Ingredients: In a large bowl, whisk together the dry ingredients – flour, sugars, baking soda, baking powder, salt, and spices.
  3. Combine Wet Ingredients: In another bowl, whisk together the eggs, pumpkin puree, oil, milk, and vanilla until smooth.
  4. Combine and Bake: Gently fold the wet ingredients into the dry mixture until just combined. Divide the batter into muffin cups and bake for 20-25 minutes until a toothpick comes out clean.
