Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- Mix Dry Ingredients: In a large bowl, whisk together the dry ingredients – flour, sugars, baking soda, baking powder, salt, and spices.
- Combine Wet Ingredients: In another bowl, whisk together the eggs, pumpkin puree, oil, milk, and vanilla until smooth.
- Combine and Bake: Gently fold the wet ingredients into the dry mixture until just combined. Divide the batter into muffin cups and bake for 20-25 minutes until a toothpick comes out clean.
- Cool and Serve: Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
