Wet Ingredients:

  • 1 cup canned pumpkin puree
  • 2/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. Combine wet ingredients: In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Add eggs and vanilla, then stir in dry ingredients and milk.
  4. Bake: Fill muffin cups and bake for 20-22 minutes until a toothpick comes out clean.
  5. Cool and enjoy: Cool muffins in the pan for 5 minutes before transferring to a wire rack to cool completely.
