For the pancakes:
- 1 1/4 cups all-purpose flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground sage (dried)
- 3/4 cup pumpkin puree
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
For the blackberry sauce:
- 1 1/2 cups fresh or frozen blackberries
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch mixed with 1 tablespoon water
Instructions
- Prepare the blackberry sauce: In a medium saucepan, combine blackberries, sugar, and lemon juice. Cook over medium heat until berries begin to break down, about 5–7 minutes. Stir in the cornstarch slurry and cook for 1–2 minutes more until thickened. Remove from heat and keep warm.
- Make the pancakes: In a large bowl whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ground sage. In another bowl, whisk together pumpkin puree, buttermilk, egg, melted butter, and vanilla. Add the wet ingredients to the dry and stir just until combined.
- Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease. Pour 1/4 cup batter per pancake onto the surface. Cook for 2–3 minutes or until bubbles form and edges look set. Flip and cook another 2 minutes or until golden and cooked through.
- Serve: Serve pancakes warm with blackberry sauce spooned over the top.
Notes
- Fresh sage can be used instead of dried—use 1 tablespoon finely minced.
- The blackberry sauce can be made ahead and reheated gently before serving.
- These pancakes also freeze well.
