Ground Chicken/Turkey Mixture:
- 1 pound ground chicken or turkey
- 1 tablespoon oil (avocado or sesame)
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
Sauce:
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon soy sauce or tamari
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
Additional Ingredients:
- 2 green onions, sliced
- 1/4 cup shredded carrots
- 1/4 cup chopped cucumber
- Butter lettuce leaves for serving
- Sesame seeds and lime wedges for garnish
Instructions
- Prepare the Ground Chicken/Turkey: Heat oil in a large skillet over medium heat. Sauté garlic and ginger until fragrant. Add ground chicken and cook until browned, breaking it up with a spatula.
- Make the Sauce: Stir in gochujang, soy sauce, rice vinegar, honey, and sesame oil. Cook until the sauce thickens slightly.
- Finish and Assemble: Remove from heat, stir in green onions. Spoon the chicken mixture into lettuce leaves, top with carrots, cucumber, sesame seeds, and lime. Serve immediately.
