  • 1 tablespoon sesame oil
  • 1 garlic clove, minced
  • 1 teaspoon grated fresh ginger
  • 24 tablespoons warm water to thin sauce

Additional Ingredients:

  • 1 cup shredded carrots
  • 1/2 cup thinly sliced red bell pepper
  • 2 green onions, thinly sliced
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Cook Soba Noodles: Cook the soba noodles according to package directions. Drain and rinse under cold water; set aside.
  2. Prepare Peanut Sauce: Whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, garlic, ginger, and water until smooth.
  3. Toss Noodles: In a large bowl, toss cooked noodles with peanut sauce until coated. Add carrots, bell pepper, and green onions; toss again.
  4. Serve: Transfer to bowls, top with cilantro and sesame seeds. Serve chilled or at room temperature.
