Soba Noodles:
- 8 ounces soba noodles
Peanut Sauce:
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame oil
- 1 garlic clove, minced
- 1 teaspoon grated fresh ginger
- 2–4 tablespoons warm water to thin sauce
Additional Ingredients:
- 1 cup shredded carrots
- 1/2 cup thinly sliced red bell pepper
- 2 green onions, thinly sliced
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon toasted sesame seeds
Instructions
- Cook Soba Noodles: Cook the soba noodles according to package directions. Drain and rinse under cold water; set aside.
- Prepare Peanut Sauce: Whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, garlic, ginger, and water until smooth.
- Toss Noodles: In a large bowl, toss cooked noodles with peanut sauce until coated. Add carrots, bell pepper, and green onions; toss again.
- Serve: Transfer to bowls, top with cilantro and sesame seeds. Serve chilled or at room temperature.
