Instructions
- Prepare Raspberry Mixture: In a blender or food processor, combine the raspberries, maple syrup, and vanilla extract. Blend until smooth.
- Mix Chia Pudding: Pour the raspberry mixture into a medium bowl and stir in the almond milk. Add the chia seeds and lemon zest if using, and stir well to combine.
- Chill: Cover and refrigerate for at least 4 hours or overnight, stirring once after the first 30 minutes to prevent clumping.
- Serve: Once set, stir again and divide into serving glasses or bowls. Garnish with fresh raspberries and mint leaves if desired. Serve chilled.
