  • 8 oz mascarpone cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 package (7 oz) ladyfinger cookies
  • 2 tablespoons powdered sugar for dusting
  • Extra raspberries and fresh mint for garnish

Instructions

  1. Prepare the Raspberry Mixture: In a small bowl, combine raspberry jam with raspberry liqueur (or juice) until smooth.
  2. Make the Mascarpone Cream: In a large bowl, beat heavy cream until soft peaks form. Add mascarpone cheese, sugar, and vanilla; beat until smooth.
  3. Assemble the Tiramisu: Dip half of the ladyfingers into the raspberry mixture and arrange in a dish. Spread half of the mascarpone mixture and top with half of the raspberries. Repeat the layers.
  4. Chill and Garnish: Refrigerate for at least 4 hours. Dust with powdered sugar and garnish with raspberries and mint before serving.
