Ingredients
Eggplant:
1 medium eggplant (cut into 1/2-inch cubes)

2 medium zucchinis (sliced into rounds)

Garlic:

Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Prepare Vegetables: In a large bowl, combine eggplant, zucchinis, bell peppers, and onion. Drizzle with olive oil, add thyme, oregano, red pepper flakes, salt, and pepper. Toss to coat.
- Roast Vegetables: Spread the vegetables on a baking sheet lined with parchment paper. Roast for 20 minutes.
- Sauté Garlic and Tomatoes: In a skillet, sauté garlic. Add tomatoes, cook until they break down.
- Combine: Add roasted vegetables to the skillet, stir, and cook for 5 minutes.
- Finish: Remove from heat, stir in fresh basil, and serve.
