Eggplant:
- 1 medium eggplant, diced
Zucchini and Squash:
- 1 medium zucchini, diced
- 1 yellow squash, diced
Bell Peppers:
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
Other Ingredients:
- 1 small red onion, diced
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh basil, chopped
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Prepare the vegetables: Drain excess moisture from eggplant, then combine all diced vegetables in a bowl with garlic. Toss with olive oil.
- Roast the vegetables: Spread the vegetables in a baking dish. Add tomatoes, herbs, salt, and pepper. Roast for 35-40 minutes.
- Finish and serve: Stir in fresh basil and serve warm as a side dish or over bread.

- Ratatouille can also be made on the stovetop for a quicker version.
