Description

A classic French vegetable dish, Ratatouille is a hearty and flavorful medley of roasted eggplant, zucchini, bell peppers, and tomatoes, seasoned with herbs and garlic. This vegan side dish is perfect for a light and healthy meal.

Eggplant:

  • 1 medium eggplant, diced

Zucchini and Squash:

  • 1 medium zucchini, diced
  • 1 yellow squash, diced

Bell Peppers:

  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced

Other Ingredients:

  • 1 small red onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the vegetables: Drain excess moisture from eggplant, then combine all diced vegetables in a bowl with garlic. Toss with olive oil.
  3. Roast the vegetables: Spread the vegetables in a baking dish. Add tomatoes, herbs, salt, and pepper. Roast for 35-40 minutes.
  4. Finish and serve: Stir in fresh basil and serve warm as a side dish or over bread.
