Ingredients

Shredded Carrots:

1 1/2 cups

Medjool Dates (pitted):

1 cup

Raw Walnuts:

1 cup

Unsweetened Shredded Coconut:

1/2 cup

Raw Almonds:

1/2 cup

Ground Cinnamon:

1 teaspoon

Ground Nutmeg:

1/4 teaspoon

Ground Ginger:

1/4 teaspoon

Salt:

1/4 teaspoon

Pure Vanilla Extract:

1 teaspoon

Extra Shredded Coconut for Rolling (optional):

Instructions

  1. Add the raw walnuts and almonds to a food processor. Pulse until finely chopped.
  2. Add the pitted dates and pulse again until the mixture starts to stick together.
  3. Add the shredded carrots, shredded coconut, cinnamon, nutmeg, ginger, salt, and vanilla extract. Process until well combined and the mixture holds together when pressed.
  4. Scoop out tablespoon-sized portions and roll into balls. Roll each ball in extra shredded coconut if desired.
  5. Place the bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the refrigerator for up to one week.

Notes

  • Add 1-2 tablespoons of maple syrup if you prefer a sweeter bite.
