Ingredients
Shredded Carrots:
1 1/2 cups
Medjool Dates (pitted):
1 cup
Raw Walnuts:
1 cup
Unsweetened Shredded Coconut:
1/2 cup
Raw Almonds:
1/2 cup
Ground Cinnamon:
1 teaspoon
Ground Nutmeg:
1/4 teaspoon
Ground Ginger:
1/4 teaspoon
Salt:
1/4 teaspoon
Pure Vanilla Extract:
1 teaspoon
Extra Shredded Coconut for Rolling (optional):

Instructions
- Add the raw walnuts and almonds to a food processor. Pulse until finely chopped.
- Add the pitted dates and pulse again until the mixture starts to stick together.
- Add the shredded carrots, shredded coconut, cinnamon, nutmeg, ginger, salt, and vanilla extract. Process until well combined and the mixture holds together when pressed.
- Scoop out tablespoon-sized portions and roll into balls. Roll each ball in extra shredded coconut if desired.
- Place the bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the refrigerator for up to one week.
Notes
- Add 1-2 tablespoons of maple syrup if you prefer a sweeter bite.
- For extra texture, stir in raisins or chopped pecans after blending.
