- Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides to easily lift the brownies out after baking.
- Prepare the Brownie Batter: In a large bowl, whisk together the melted butter and 1 cup granulated sugar until well combined. Add the egg, red food coloring, and 1 teaspoon vanilla extract. Whisk until the mixture is smooth. Sift in the cocoa powder, salt, and flour. Gently stir until just combined. Fold in the white chocolate chips if using.
- Prepare the Cream Cheese Swirl: In a separate bowl, beat the softened cream cheese with 1/4 cup granulated sugar, egg yolk, and 1/2 teaspoon vanilla extract until smooth and creamy.
- Assemble the Brownies: Pour the brownie batter into the prepared baking dish and spread it out evenly. Dollop spoonfuls of the cream cheese mixture on top of the batter. Use a knife or toothpick to swirl the cream cheese into the brownie batter, creating a marbled effect.
- Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
- Cool and Serve: Allow the brownies to cool completely in the baking dish. Once cooled, lift the brownies out using the parchment paper overhang. Cut into 12 squares and serve.
