Frosting:

  • 8 ounces cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 3 1/2 cups powdered sugar
  • 1 tablespoon heavy cream (optional)
  • 1 teaspoon vanilla bean paste (or seeds from 1 vanilla bean)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line the bottoms with parchment paper.
  2. Mix dry ingredients: In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt.
  3. Cream butter and sugar: In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs and buttermilk mixture: Add eggs one at a time, then mix in the buttermilk mixture with food coloring, vinegar, and vanilla extract.
  5. Combine wet and dry ingredients: Alternate adding dry and wet mixtures to the butter mixture until just combined. Divide batter between pans and bake for 25-30 minutes.
  6. Make frosting: Beat cream cheese and butter until smooth, then add powdered sugar and vanilla bean paste. Add cream for desired consistency.
  7. Frost the cake: Frost cooled cake layers, stacking and spreading frosting between layers and over the top and sides.
