Instructions

  1. Preheat and prepare crust. Preheat your oven to 350°F (175°C). In a medium bowl, combine the crushed Oreos with the melted unsalted butter until evenly mixed. Press this mixture firmly into the bottom of a springform pan to form an even crust layer.
  2. Beat cream cheese and sugar. In a separate large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar while continuing to beat until the mixture becomes fluffy.
  3. Add eggs and other wet ingredients. Add the eggs one at a time to the cream cheese mixture, beating well after each addition to ensure full incorporation. Then stir in the sour cream followed by the vanilla extract.
  4. Incorporate red velvet cake mix. Gently fold the red velvet cake mix into the cream cheese mixture until just combined, taking care not to overmix to maintain a light texture.
  5. Assemble and bake. Pour the cheesecake filling over the prepared Oreo crust in the springform pan. Smooth the top evenly with a spatula. Bake in the preheated oven for 50 to 60 minutes, or until the edges are set but the center still has a slight jiggle.
  6. Cool and chill. Allow the cheesecake to cool completely at room temperature. Once cooled, refrigerate for at least four hours or preferably overnight to let it set fully and develop flavors.
