  • 2 cloves garlic, minced
  • 3 cups cooked pinto beans (or 2 cans, drained and rinsed)
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder (optional)
  • ½ cup bean cooking liquid or water
  • Salt to taste
  • Fresh lime juice (optional)

Instructions

  1. Heat the Oil: Heat oil in a large skillet over medium heat.
  2. Sauté Onion: Add onion, sauté until soft, about 5 mins.
  3. Add Garlic: Stir in garlic, cook for 30 seconds.
  4. Add Beans & Spices: Add beans, cumin, chili powder, and ¼ cup of liquid.
  5. Mash Beans: Mash beans until smooth, adding more liquid if needed.
  6. Cook: Cook for 5–7 mins until heated through and thickened.
  7. Season: Season with salt and lime juice.

Notes

  • For creamier beans, blend them with liquid before adding to the pan.
  • You can add cheese, jalapeños, or chipotle for extra flavor.
