  • 1 cup cold unsalted butter, cubed

For the Custard Filling:

  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 4 cups fresh rhubarb, diced
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Prepare the Crust: Combine 2 cups flour and 1/4 cup sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Press into the pan and bake for 15 minutes.
  3. Make the Custard: Whisk together eggs, sugar, cream, and flour. Stir in rhubarb. Pour over the hot crust and bake for 40–45 minutes.
  4. Cool and Serve: Cool the bars in the pan, then cut into bars. Dust with powdered sugar if desired.
