Description

Indulge in the perfect balance of sweet and salty with these delightful Rice Krispie Potato Chip Cookies. A classic cookie recipe that combines the crunch of potato chips and cereal with the sweetness of brown sugar and vanilla.

Ingredients

Scale

Dough:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Mix-ins:

  • 1 cup crushed potato chips
  • 1 cup Rice Krispies cereal
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  3. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  4. Add mix-ins: Fold in the crushed potato chips, Rice Krispies cereal, and nuts if using.
  5. Bake: Drop heaping tablespoonfuls of dough onto the prepared baking sheets. Bake for 10–12 minutes, or until the edges are golden brown.
  6. Cool: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra crunch, lightly press a few more crushed chips or cereal on top before baking.
  • Store in an airtight container for up to 5 days.
