- 3 cups low-sodium chicken or vegetable broth
For Caramelized Onion:

- 1 large onion, thinly sliced
Additional Ingredients:
- 1/2 cup dried cherries
- 1/2 cup shelled pistachios, roughly chopped
- 1 tablespoon orange zest
- 2 tablespoons fresh orange juice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cumin
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Rinse the Rice: Rinse the rice under cold water until the water runs clear; drain well.
- Caramelize the Onions: In a large skillet, melt the butter and olive oil over medium-low heat. Add the sliced onion and cook slowly until caramelized and golden brown, about 20-25 minutes. Set aside half of the onions for topping.
- Cook the Rice: Stir in the rice, cinnamon, cumin, salt, and pepper. Cook for 2-3 minutes. Add the broth, bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes until the rice is tender.
- Finish the Dish: Remove from heat, let sit for 5 minutes, then fluff the rice with a fork. Gently stir in the cherries, pistachios, orange zest, and juice. Top with reserved caramelized onions and parsley before serving.
