Onion Mixture:
- 4 large yellow onions, thinly sliced
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 garlic cloves, minced
Soup Base:
- 1/2 cup dry white wine (optional)
- 6 cups beef broth
- 2 teaspoons Worcestershire sauce
- 2 sprigs fresh thyme or 1/2 teaspoon dried thyme
- 1 bay leaf
- 1/2 teaspoon black pepper
Additional:
- 1 baguette, sliced and toasted
- 2 cups shredded Gruyère cheese
Instructions
- Caramelize Onions: In a large heavy-bottomed pot, melt butter with olive oil over medium heat. Add onions and cook slowly for 30 to 40 minutes until caramelized and golden brown. Sprinkle sugar and salt halfway through. Stir in garlic.
- Deglaze and Simmer: Deglaze with white wine, then add beef broth, Worcestershire sauce, thyme, bay leaf, and pepper. Bring to a boil, then simmer for 25 minutes. Remove thyme and bay leaf.
- Broil and Serve: Preheat broiler. Ladle soup into bowls, top with toasted baguette slices, and cover with Gruyère cheese. Broil until cheese is melted and bubbly. Serve hot.

- For a richer flavor, use a combination of beef and chicken broth.
- You can substitute Swiss or mozzarella cheese if Gruyère is unavailable.
