Ingredients

For the Cookies:

1 cup unsalted butter, softened, 1 cup granulated sugar, ½ cup brown sugar, packed, 2 large eggs, 1 teaspoon vanilla extract, 1¾ cups all-purpose flour, ¾ cup unsweetened cocoa powder, 1 teaspoon baking soda, ½ teaspoon salt

For the Ganache Glaze:

¾ cup heavy cream, 6 ounces semi-sweet chocolate, chopped, 1 tablespoon unsalted butter


Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. Mix butter and sugars: Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, beating well after each, then mix in the vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until fully incorporated.
  4. Bake cookies: Scoop tablespoon-sized portions of dough and roll into balls. Place on the baking sheets, leaving about 2 inches of space between each. Bake for 8–10 minutes, or until the edges are set and centers look slightly soft. Allow cookies to cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  5. Make ganache: Heat the heavy cream in a small saucepan over medium heat until just beginning to simmer. Pour the hot cream over the chopped chocolate and butter in a heatproof bowl. Let sit for 2 minutes, then stir until smooth and glossy.
  6. Glaze cookies: Once cookies are completely cooled, spoon or drizzle the ganache over the tops. Allow the glaze to set at room temperature or chill briefly for a firmer finish.
