- zest of 1 lemon

Instructions
- Preheat the oven: Preheat the oven to 350°F. Place the pie crust into a 9-inch pie dish and crimp the edges if desired.
- Mix the filling: In a large mixing bowl, combine ricotta, sugar, eggs, vanilla, cinnamon, salt, and lemon zest. Beat until smooth and well combined. Fold in mini chocolate chips if desired.
- Bake: Pour the ricotta mixture into the prepared crust and smooth the top. Bake for 45–55 minutes until just set.
- Cool and serve: Let the pie cool, then refrigerate for at least 2 hours. Dust with powdered sugar before serving.
