For the Chicken:

  • lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

For the Tacos:

  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage or lettuce
  • ½ cup crumbled queso fresco or feta
  • Lime wedges for serving

For the Green Sauce:

  • 1 avocado
  • ½ cup Greek yogurt or sour cream
  • 1 jalapeño (seeded for less heat)
  • 1 clove garlic
  • ½ cup fresh cilantro
  • juice of 1 lime
  • 2 tbsp olive oil
  • ¼ tsp salt
  • 24 tbsp water to thin

Instructions

  1. Prepare the Chicken: Mix cumin, chili powder, garlic powder, onion powder, salt, and pepper. Rub spice mix over the chicken. Cook in a skillet until fully cooked and golden brown. Chop or shred the chicken.
  2. Make the Green Sauce: Blend avocado, Greek yogurt, jalapeño, garlic, cilantro, lime juice, olive oil, salt, and water until smooth.
  3. Assemble Tacos: Warm tortillas, then fill with chicken, cabbage, queso fresco, and a drizzle of green sauce. Serve with lime wedges.
