Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the carrots: In a large bowl, toss the carrots with olive oil, brown sugar, melted butter, salt, pepper, and cinnamon if using, until evenly coated.
- Roast the carrots: Spread the carrots in a single layer on the prepared baking sheet. Roast for 25–30 minutes, tossing once halfway through, until the carrots are tender and caramelized around the edges.
