- 1 cup cooked brown rice
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels

- 1 avocado, sliced

- 1/4 cup crumbled cotija cheese (optional)
- 1 lime cut into wedges
Instructions
- Preheat the oven: Preheat oven to 425°F (220°C).
- Prepare cauliflower: Toss cauliflower with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Roast for 25-30 minutes.
- Prepare other ingredients: Cook rice, warm black beans.
