Roasted Cauliflower:

  • 1 medium head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Other Bowl Ingredients:

  • 1 cup cooked brown rice or quinoa
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn kernels, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • juice of 1 lime
  • your favorite salsa for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Roast Cauliflower: Place cauliflower on a baking sheet, drizzle with olive oil, sprinkle with spices, toss to coat, and roast for 20-25 minutes.
  3. Prepare Other Ingredients: Warm black beans and corn in a saucepan. Assemble bowls with rice, roasted cauliflower, beans, corn, tomatoes, avocado, lime juice, and cilantro.
  4. Serve: Top with salsa and enjoy!
