Roasted Cauliflower:
- 1 medium head cauliflower, cut into florets

- 1 teaspoon chili powder
- 1/2 teaspoon cumin

Other Bowl Ingredients:
- 1 cup cooked brown rice or quinoa
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn kernels, fresh or frozen
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- juice of 1 lime
- your favorite salsa for serving
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C).
- Roast Cauliflower: Place cauliflower on a baking sheet, drizzle with olive oil, sprinkle with spices, toss to coat, and roast for 20-25 minutes.
- Prepare Other Ingredients: Warm black beans and corn in a saucepan. Assemble bowls with rice, roasted cauliflower, beans, corn, tomatoes, avocado, lime juice, and cilantro.
- Serve: Top with salsa and enjoy!
