Zucchini:
- 4 medium zucchini (sliced into 1/2-inch rounds)
Seasoning:
- 2 tbsp olive oil
- 3 garlic cloves (minced)
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp grated Parmesan cheese (optional)
- chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Prepare the zucchini: In a large bowl, toss the zucchini slices with olive oil, garlic, Italian seasoning, salt, and pepper until evenly coated.
- Roast the zucchini: Spread the zucchini in a single layer on the prepared baking sheet. Roast for 15–18 minutes, flipping halfway through, until tender and golden brown around the edges.
- Optional: If using, sprinkle with Parmesan cheese during the last 2–3 minutes of roasting. Remove from oven and garnish with chopped parsley if desired. Serve warm.
Notes
- Try adding cherry tomatoes or red pepper flakes for extra flavor.
