Description

This simple roasted garlic recipe transforms whole heads of garlic into sweet, caramelized, and spreadable cloves. Roasting garlic enhances its flavor by mellowing sharpness and adding a delightful, nutty sweetness, perfect for spreading on bread, mixing into sauces, or adding depth to your favorite dishes.

Ingredients

Scale

Ingredients

  • 2 heads garlic
  • 1 tablespoon olive oil
  • ¼ teaspoon salt

Instructions

  1. Prepare for Roasting: Preheat your oven to 400°F (200°C). Slice approximately ½ inch off the top of each garlic head to expose the individual cloves, allowing oil and heat to penetrate evenly and preventing the garlic from drying out during roasting.
  2. Season the Garlic: Place each garlic head on a piece of aluminum foil. Drizzle one tablespoon of olive oil evenly over each head, then sprinkle ¼ teaspoon of salt on top. Wrap each garlic head fully in the foil, sealing it to create a steamy environment for roasting.
  3. Roast to Perfection: Place the foil-wrapped garlic heads on a baking sheet and roast in the preheated oven for 35 to 40 minutes. The cloves should become golden brown, soft, and tender enough to squeeze out easily from their papery skins.
  4. Cool and Use: Remove the garlic from the oven and allow it to cool completely. Once cool, gently squeeze the roasted cloves out of the skins. The roasted garlic can be spread directly on bread, mixed into recipes, or stored for later use.

Notes

  • Be careful when squeezing the roasted garlic cloves; they will be very soft and delicate.
  • Roasted garlic can be stored in an airtight container in the refrigerator for up to two weeks.
  • Use roasted garlic as a flavorful substitute for raw garlic in dishes to add a milder, sweeter taste.
  • If you prefer stronger roasted flavor, you can roast for up to 45 minutes but monitor to avoid burning.
