Potatoes:

  • 2 pounds baby potatoes (halved)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Additional Ingredients:

  • 6 garlic cloves (peeled and smashed)
  • 8 oz block feta cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Prepare the potatoes: Toss halved baby potatoes with olive oil, salt, pepper, and smashed garlic cloves in a large mixing bowl.
  3. Roast: Spread the seasoned potatoes in a single layer on a baking sheet or oven-safe dish. Place the block of feta cheese in the center and sprinkle oregano and red pepper flakes over the top. Roast for 35–40 minutes until golden and crispy.
