Potatoes:
- 2 pounds baby potatoes (halved)
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Additional Ingredients:
- 6 garlic cloves (peeled and smashed)
- 8 oz block feta cheese
- 1 teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C).
- Prepare the potatoes: Toss halved baby potatoes with olive oil, salt, pepper, and smashed garlic cloves in a large mixing bowl.
- Roast: Spread the seasoned potatoes in a single layer on a baking sheet or oven-safe dish. Place the block of feta cheese in the center and sprinkle oregano and red pepper flakes over the top. Roast for 35–40 minutes until golden and crispy.
- Finish and serve: Drizzle with lemon juice, stir to mix the melted feta with the potatoes, and garnish with fresh parsley before serving.
Notes
- You can use crumbled feta in place of a block.
