Roasted Red Pepper Sauce:
- 2 large roasted red bell peppers (from jar or freshly roasted)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1/4 cup chopped onion
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup vegetable or chicken broth
- 1/4 cup heavy cream or coconut milk
- 2 tablespoons grated Parmesan cheese (optional)
- Salt and black pepper to taste
Instructions
- Saute Onion and Garlic: In a skillet over medium heat, warm olive oil and sauté onion and garlic for 2–3 minutes until soft and fragrant.
- Blend Ingredients: Transfer sautéed mixture to a blender along with roasted red peppers, broth, cream or coconut milk, and Parmesan if using. Blend until smooth.
- Simmer: Pour the blended sauce back into the skillet and simmer over low heat for 3–4 minutes until slightly thickened.
- Season: Season with salt and pepper to taste.
Notes
- This sauce pairs well with pasta, grilled chicken, or roasted vegetables.
- For a vegan version, use coconut milk and skip the Parmesan cheese.
