Sweet Potatoes:
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

- 1/2 teaspoon salt

Toppings:
- 8 small corn or flour tortillas
- 1 cup shredded red cabbage

Instructions
- Preheat Oven: Preheat oven to 425°F (220°C).
- Prepare Sweet Potatoes: Toss diced sweet potatoes with olive oil and seasonings. Spread on a baking sheet and roast for 25-30 minutes.
- Warm Tortillas: Heat tortillas in a skillet or microwave until soft.
