  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss zucchini: In a large bowl, toss the zucchini slices with olive oil, garlic powder, oregano, red pepper flakes (if using), salt, and black pepper until evenly coated.
  3. Roast zucchini: Spread the zucchini in a single layer on the prepared baking sheet. Roast for 18–22 minutes, flipping once halfway through, until tender and lightly browned.
  4. Add Parmesan (optional): If using Parmesan, sprinkle it over the zucchini during the last 5 minutes of baking.
