Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350ºF. Lightly spray a muffin pan with cooking spray or line it with cupcake liners to prevent sticking.
  2. Cook Sausage: In a skillet over medium heat, cook the sausage until it is no longer pink, making sure it is fully cooked through. Drain the excess fat thoroughly to avoid greasiness.
  3. Mix Ingredients: In a large mixing bowl, combine the cooked sausage, well-drained Rotel diced tomatoes and green chilies, Bisquick baking mix, beaten eggs, shredded cheddar cheese, milk, and hash browns. Stir everything together until just combined.
