Ingredients
Scale
Meat
- 1 lb sausage
Vegetables & Dairy
- 1 (10-oz) can Rotel diced tomatoes and green chilies, very well drained
- 1 cup hash browns
- 1½ cups shredded cheddar cheese
- 4 large eggs, beaten
- ¼ cup milk
Dry Ingredients
- 1 cup Bisquick baking mix
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350ºF. Lightly spray a muffin pan with cooking spray or line it with cupcake liners to prevent sticking.
- Cook Sausage: In a skillet over medium heat, cook the sausage until it is no longer pink, making sure it is fully cooked through. Drain the excess fat thoroughly to avoid greasiness.
- Mix Ingredients: In a large mixing bowl, combine the cooked sausage, well-drained Rotel diced tomatoes and green chilies, Bisquick baking mix, beaten eggs, shredded cheddar cheese, milk, and hash browns. Stir everything together until just combined.
- Fill Muffin Pan: Spoon the mixed batter evenly into the prepared muffin pan cups, filling each up to the top for full, hearty muffins.
- Bake: Place the muffin pan in the preheated oven and bake for about 20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Notes
- Make sure to drain the canned Rotel well to prevent sogginess in the muffins.
- You can substitute the sausage with a turkey or chicken sausage for a leaner version.
- These muffins can be stored in the refrigerator for up to 3 days or frozen for longer storage.
- Reheat in the microwave or oven before serving for best texture.
- Feel free to add chopped onions or bell peppers for extra flavor and nutrition.
