Ingredients
Main Ingredients
- Shredded rotisserie chicken – 2 cups
- BBQ sauce (Sweet Baby Ray’s Sweet Vidalia Onion recommended) – 1/2 cup
- Pizza dough (homemade or store-bought) – enough for 4 flatbreads (about 1 lb)
- Goat cheese, crumbled – 1/2 cup
- Radishes, thinly sliced – 6 medium
- Baby arugula – 1 cup
- Balsamic vinegar (optional) – 2 tablespoons
Instructions
- Prepare the Grill: Heat your grill to medium heat and arrange it for indirect grilling to prevent the dough from burning before the toppings cook.
- Divide and Shape Dough: Divide the pizza dough into 4 equal pieces. Press each piece into a flatbread shape about 1/4 inch thick on a floured surface.
- Grill Flatbread Base: Place the flatbreads on the grill over indirect heat. Grill until one side is browned and slightly crispy, about 3-5 minutes.
- Flip and Top: Flip each flatbread over and quickly spread a generous layer of BBQ sauce on the cooked side. Evenly distribute shredded rotisserie chicken, sprinkle crumbled goat cheese, and scatter thinly sliced radishes over the top.
- Cook to Melt Cheese: Continue grilling until the bottom side of the flatbread is browned and crispy and the goat cheese begins to melt, approximately 4-6 minutes.
- Add Fresh Toppings and Serve: Remove flatbreads from the grill and immediately top with fresh baby arugula. Drizzle balsamic vinegar over the top if desired. Serve warm and enjoy the vibrant flavors.
Notes
- For a spicier variation, add sliced jalapeños or a dash of hot sauce on top of the flatbread before grilling.
- If you don’t have a grill, you can cook the flatbreads in a preheated oven at 450°F (232°C) using a pizza stone or baking sheet, broiling briefly at the end to melt the cheese.
- Use goat cheese at room temperature to ensure even melting.
- To make the flatbread dough from scratch, use a simple recipe with flour, water, yeast, salt, and olive oil.
