SALMON CROQUETTES:
- 2 (6-ounce) cans salmon (drained, bones and skin removed)
- ½ cup breadcrumbs (plus more for coating)
- 1 large egg
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 2 green onions (finely chopped)
- ¼ cup finely diced red bell pepper
- 1 tablespoon fresh lemon juice
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
- 2 tablespoons olive oil (for frying)
Instructions
- Mix Ingredients: In a large bowl, combine salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, green onions, red bell pepper, lemon juice, garlic powder, onion powder, salt, pepper, and parsley.
- Shape Patties: Form mixture into 8 small patties and coat with breadcrumbs.
- Fry Croquettes: Heat olive oil in a skillet, fry croquettes in batches for 3–4 minutes per side until golden and cooked through.
- Serve: Drain on paper towels and serve warm with lemon wedges or dipping sauce.
