SALMON CROQUETTES:

  • 2 (6-ounce) cans salmon (drained, bones and skin removed)
  • ½ cup breadcrumbs (plus more for coating)
  • 1 large egg
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 green onions (finely chopped)
  • ¼ cup finely diced red bell pepper
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Mix Ingredients: In a large bowl, combine salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, green onions, red bell pepper, lemon juice, garlic powder, onion powder, salt, pepper, and parsley.
  2. Shape Patties: Form mixture into 8 small patties and coat with breadcrumbs.
  3. Fry Croquettes: Heat olive oil in a skillet, fry croquettes in batches for 3–4 minutes per side until golden and cooked through.
  4. Serve: Drain on paper towels and serve warm with lemon wedges or dipping sauce.
