Salmon:

  • 1 pound salmon fillet, skinless

Sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 cups baby spinach
  • Salt and black pepper to taste

Garnish:

  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Prepare the pasta according to package instructions until al dente. Drain and set aside, saving 1/2 cup of pasta water.
  2. Prepare the Salmon: Season the salmon with salt and pepper. Sear in a skillet over medium-high heat for 4-5 minutes per side. Flake into pieces and set aside.
  3. Make the Sauce: In the same skillet, melt butter and sauté garlic. Add cream, Parmesan, lemon zest, and juice. Stir until smooth. Add spinach and cook until wilted.
  4. Combine and Serve: Toss pasta in the sauce, adding reserved water as needed. Gently fold in salmon. Adjust seasoning, garnish with parsley, and serve.
