Tofu and Coating
- 14 oz (400 g) firm tofu, pressed and cut into 1-inch cubes
- 1/2 cup cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon ground white pepper

- 1/2 teaspoon garlic powder
For Frying and Flavoring
- 3 tablespoons vegetable oil (for frying)
- 2 garlic cloves, minced
- 2 green onions, finely sliced

Instructions
- Prepare the Tofu: Pat the tofu dry thoroughly to remove excess moisture and cut it into 1-inch cubes. This step ensures the tofu will get crispy when cooked.
- Coat the Tofu: In a medium bowl, combine cornstarch, salt, ground white pepper, ground black pepper, and garlic powder. Toss the tofu cubes gently in this mixture, ensuring each piece is evenly coated for maximum crispiness and flavor.
- Heat Oil and Fry Tofu: Heat the vegetable oil in a large nonstick skillet or wok over medium-high heat. Fry the tofu in batches so they are not overcrowded, turning occasionally, until each side is golden and crispy, about 6–8 minutes total per batch.
- Drain the Tofu: Remove the fried tofu cubes with a slotted spoon and place them on paper towels to drain excess oil, which keeps them crispy.
- Sauté Aromatics: Reduce the heat to medium in the same pan. Add the minced garlic, sliced green onions, and red chili if using, sautéing for 1–2 minutes until fragrant, which enhances the flavor base.
- Toss Tofu with Aromatics: Return the crispy tofu to the pan and drizzle with toasted sesame oil if desired. Toss everything together gently to coat the tofu cubes with the aromatic mixture evenly.
- Serve: Serve the salt and pepper tofu immediately while hot and crispy for the best texture and flavor.
